It all happened naturally for Sarita’s Organic Tortillas. What began as a craving for freshly homemade tortillas turned into a local craze in Lubbock, TX. Sarah and Jay Castro, owners of Sarita’s Organic Tortillas are a customer favorite at the Lubbock Downtown Farmers Market
“We lived in the Mission District in San Francisco…hand-made, fresh tortillas were easy to find,” says Sarah. “But with the move to Lubbock, we found it more difficult to access these natural products.” The craving turned into an overnight success. After careful research, Sarah was able to find a local distributor that sold organic corn flour processed in Muleshoe, TX. It was cheaper to buy 50 pounds at a time. With a surplus of product, Sarah began contacting women in a local Facebook group to find out if they were interested in purchasing her tortillas.
As the women in the Facebook group raved about the quality of the tortillas, Sarah realized there was a demand for her product: made locally, organically, and freshly delivered to the customer’s doorstep. “I didn’t start with a business plan. I simply craved natural, healthy food that I knew wasn’t harmful to my body.” Sarita’s tortillas are made with organic corn and Non-GMO avocado oil. The flour tortillas are made with organic, unbleached flour.
After six months of sharing her product with friends and family, Sarah decided it was time to join the Lubbock Downtown Farmers Market in 2015. “Jay and I got to the market, looked at each other and said, ‘We made too many.’” Little did they know, the tortillas would be sold out before they could even get the tent set up. “That was a wake up call,” says Sarah.
Both Sarah and Jay work and go to school full time, while raising two little boys. “We have goals of opening a small restaurant someday, but for now, the tortilla sales are enough to keep us busy. We wake up at 1 or 2 am on days of the market, to ensure the tortillas are truly fresh when our customers purchase them.”
