I got the opportunity this morning to sit, and sip coffee with the owner and producer of Schulte Beef. Don Schulte is the 3rd generation to farm and ranch on the original 1920’s homestead in Nazareth, Texas. I was in such awe when he told me that they have always raised cattle not only for themselves but also for everyone in the family.
About 4 years ago, the Schulte family wanted to start marketing their quality beef straight to consumers. “We want to market all of the calves that we sell directly from the farm to the table.” Don explained to me when I asked how they got started in this business.
Don runs about 200 head cow/ calf operation; the calves that are born in February are the same calves that they market to people after finishing them out for 100 days. He explained that he doesn’t add any antibiotics or growth hormones, and he knows exactly what goes into each calf’s diet. “There’s not anything these cattle eat that I don’t know about.” Don explained to me when we walked out to look at the calves. “Everything that these cattle eat is grown right here on this farm, except for the grains that we feed them.” They use a roasted grain, which has a higher digestive nutrient than other grains, meaning Don can feed less of it because the calves get more out of it.
This summer though the end of October you’ll be able to find their stand at the farmers market in Amarillo, every Saturday from 9am-1pm. Schulte Beef is a small company with a big heart, Don told me that one of his favorite parts about what he does is all the different people he gets to meet through this. If you have some time, go talk to them about their beef. Don will be more than happy to answer any questions you may have.
Supplies is limited, so if you want to taste some of the most tender, most flavorful meat you’ll ever have I suggest getting a hold of Schulte Beef as soon as possible!
